I have this exact same pan in the classic copper line, but purchased this for use on an induction range. I thought that the performance would be diminished due to the slightly thinner layer of copper compared to the classic line, but the difference is insignificant. I performed a comparison on an electric burner, boiling 3 cups of water in each pan, starting with absolutely room temperature water, pan and cooktop. The difference in speed of heating was 8.04% longer to heat the water in the copper coeur pan. The evenness of heating was identical, as tested anecdotally and as tested by using an empty pan and measuring temperatures in different areas of the pan. The amount of time to slow a rapid boil to below the boiling point by removing it from the heat was instant in both pans. I am thoroughly impressed with the Copper Coeur pan in every way. The only possibilities for improvement are to smooth out the hanging hole in the handle (which is not sharp, but not smooth) and to increase the copper layer to 2.3mm, like the classic line, even if this would make the pan heavier.
Last comment: Though sold separately, I will comment that the lid that matches the copper coeur line is inferior in weight and durability to the lid that matches the classic copper line.
I plan to buy MANY more of the copper coeur line pans! I just wish Falk offered as many shapes and sizes as in the classic copper line.
