wonderful all-purpose pan
My cooking is all over the map and this pan does it all. The wide opening and quick response of the copper lets me stir-fry with ease, and the evenness of the heating means I can make delicate sauces and custard bases over low direct heat instead of a double boiler. Of course it does a fine job with medium-heat sautes as well.
About the only things I don't use it for our larger roasts and braises but that's mainly because of the size. A larger five-quart dutch oven is better suited for something like that.
If you only have room for one good pan, this is the one to get.
