Wild Rice Stuffing
Wild Rice Stuffing

Ingredients & Equipment
  • 1 lb ground sausage
  • 2 Tbsp butter
  • ½ cup chopped celery
  • ½ cup chopped onion
  • 1 ½ cups cooked wild rice
  • 1 cup toasted bread, cut in small cubes
  • 1 cup chicken broth
  • ½ cup cranberries
  • ½ cup chopped unsalted pecans

Cooking Steps

  1. Preheat oven to 350 degrees
  2. Melt butter in pan over medium heat, and then add celery and onion. Cook for 3 minutes.
  3. Add sausage and cook until evenly browned.
  4. Mix in cooked rice and chicken broth. Then add the bread, cranberries, and pecans. Mix until evenly coated and combined.
  5. Bake at 350 for 35 minutes.

Ingredients & Equipment
  • 1/4 cup honeyr
  • 2 Tbsp water
  • 2 Tbsp Calabrian chili paste (we suggest Italian Harvest brand)

Cooking Steps

  1. Whisk together all ingredients in the Try Me pan (18cm saucier)
  2. Heat until warm
  3. Strain if desired, and store in air tight container

Walnut Sweet Potato Pie Recipe

Ingredients

Walnut Filling

  • 1/3 cup granulated sugar
  • 1/4 cup water, plus more for dipping pastry brush
  • 1/2 cup light corn syrup
  • 1 T unsalted butter
  • 2 large eggs
  • 1/2 t vanilla extract
  • 1/4 t kosher salt
  • 5 oz walnut halves, toasted

Pre-Baked Pie Crust

Sweet Potato Filling

  • 1 lb sweet potato
  • 1/4 cup butter
  • 1/2 cup granulated sugar
  • 1/2 t vanilla extract
  • 1/4 t ground cinnamon
  • 1/4 t ground nutmeg
  • 2/3 cup heavy cream
  • 2 large eggs

Topping

  • Whipped cream
  • 1 cup heavy cream
  • 2 T powdered sugar

Directions

Step One

Preheat oven to 350 F. Cover the whole sweet potato with cold water and bring to a boil.  Cook until tender, 40 to 50 minutes.

Step Two

Stir granulated sugar and 1/4 cup water in a medium saucepan. Brush off sugar sticking to sides of pan. Boil on high, undisturbed, until syrup turns a pale brown, 6-8 minutes. Continue to swirl pan to even out the caramelization until golden brown, about 2 minutes. Reduce heat to medium and pour in corn syrup (be careful, it will sputter and turn clumpy). Cook until clumps are melted, whisking occasionally, about 2 minutes. Remove from heat and whisk in butter until melted.

Step Three

Whisk eggs, vanilla, and salt in a medium size heatproof bowl. Slowly pour hot sugar mixture into egg mixture, whisking constantly until combined. Add walnuts and coat well. Pour walnut mixture into cooled pie shell. Bake in preheated oven until top is starting to set, but still jiggles, 15-20 minutes. Remove from oven, cool 5 minutes

Step Four

Run the sweet potato under cold water then peel off the skin. Mash the sweet potato with the butter then add the vanilla, ginger, cinnamon, salt, and nutmeg mashing until smooth. Whisk in heavy cream and granulated sugar. Whisk in eggs until combined.

Step Five

Pour sweet potato filling over warm walnut filling in pie shell. Protect crust with aluminum foil if necessary. Bake at 350 degrees until filling sets and puffs up, 30 -40 minutes. Remove from oven, cool completely on a wire rack, 2 hours. Cover surface of pie with plastic wrap, chill until cold, 6 hours or overnight.

Step Six

Make whipping cream by beating heavy cream and powdered sugar with electric whisker on medium speed until stiff peaks form, 2-3 minutes. Serve chilled.

Registry Bistro Vegan Parisian Gnocchi

  • 10 Ingredients
  • 4-6 Servings

Ingredients & Equipment
  • 1.5 c Water
  • 3/4 c cocount oil
  • 2 T Cream Dijon Mustard
  • 1.5 c AP Flour
  • 5 egg equivalent of egg subsititue (preferbly follow your heart brand)
  • Pinch of Nut Meg
  • Salt & Pepper to taste
  • 1/2 T Sugar
  • Zest of 1 Lemon
  • 4 T minced herbs of choice (chervil, chives, parsley and tarragon)

Cooking Steps

  1. Combine the water, coconut oil and Dijon mustard in a medium saucepan and bring to a simmer over medium-high heat. Reduce the heat to medium, add the flour all at once, mix vigorously with a stiff whisk to start then move to a wooden spoon or stiff spatula until the dough pulls away from the sides of the pan and the bottom of the pan is clean, with no dough sticking to it. The dough should be glossy and smooth. (this should 2-5 minutes)
  2. Remove from heat and add egg substitute, herbs, salt, pepper and sugar
  3. Mix thoroughly. You can use an electric mixer for this or a wooden spoons and elbow grease
  4. Place the dough in a large pastry bag fitted with a nickel size opening. Put the bag in the cooler and let sit for at least 1 hour. (you are looking for the coconut oil to solidify or your gnocchi will be mushy)
  5. Bring a large pot of lightly salted water to a simmer. Line a baking sheet with paper towels.
  6. Once the dough has set up pipe over the simmering water cutting the dough off with a knife once it gets to the desired length (between ½ in to 1 inch)
  7. First, the gnocchi will sink in the pot. Keep the water temperature hot, but do not boil. Once the gnocchi float to the top, continue cooking for 1 to 2 minutes
  8. Remove them with a slotted spoon or skimmer to a paper towel lined sheet pan taste one to test the timing; it may still seem slightly undercooked in the center, but it will be cooked again. Repeat with the remaining dough.
  9. When all the gnocchi have drained, place them in a single layer on the parchment-lined baking sheet, cover with plastic wrap, and refrigerate for at least 30 minutes, or up to a day.
  10. Once well rested, the gnocchi can be sautéed in coconut oil or vegan butter until caramelized.

The sauté pan is the perfect pan to begin your copper cookware collection. The biggest advantage in a sauté pan is that it is true to dimension. Sauté pans differ from frying pans in that the flat circumference of the base of the pan is equal to its diameter. Therefore, the cooking area of a sauté pan is much larger than that of a frying pan. Sauté pans also have deep, tall vertical sides. This means that cooking enthusiasts can easily shallow-fry in the cookware and make a beautiful sauce in the same pan as the protein. The copper sauté pan has even more advantages. Copper’s natural ability to rapidly heat to an even temperature allows copper sauté cookware to be the best pans for searing proteins. While some chefs may argue that you can easily sear meat in either a sauté pan or a frying skillet, particularly copper sauté pans are the best for this purpose due to the fact that copper heats faster than other types of cookware and copper also evenly distributes heat across the entire bottom of the pan allowing for the perfect even sear. While we are discussing the precise temperature control and energy efficiency of copper cookware, this is also why copper sauté pans are great for rendering sauces and one-pot meals. These innate features allow sauces to cook at a lower temperature and prevents burning. As mentioned, sauté pans have a wide base and deep, vertical sides making it the ideal pan for saucy dishes, casseroles or frittatas. The wide base allows for more cooking room but the deep sides are very forgiving to the home cook who may be prone to spillage while sautéing or frying. We hope you are enjoying this summer season! It is the time of year to appreciate the great outdoors and all the fresh fruits and vegetables that go along with it. It is also time to think of ways we can help sustain our beautiful planet for future generations. Among the many ways that sustainability has been defined, one coined back in 1987 by Gro Brundtland and the World Commission on Environment and Development still resonates: [Sustainability] seeks to meet the needs and aspirations of the present without compromising the ability to meet those of the future.

We think this idea still rings true. And, for its part, copper can be 100% recycled without any loss in performance. The energy required to recycle is approximately 20% of that required for primary production (from mining). At the factory in Belgium where our handcrafted cookware is made, most of the waste is copper scraps. It is all recycled.

The thermal conductivity of copper is second only to silver. Its high thermal conductivity reduces heat loss and the carbon emissions associated with it. Cooking with copper is efficient and reduces your carbon footprint!

Copper is a highly durable material that will continue to function throughout its lifetime without a significant loss in performance.
